Hollywood Brown Derby Cobb Salad

Originally served at the Hollywood Brown Derby in Los Angeles, the Disney version of this classic Cobb salad brings old Hollywood glamor to the parks. He even has his famous fans like John Stamos, who says he can’t leave Disney’s Hollywood Studios without ordering it.

OLD FRENCH DRESSING

1 tbsp.

fresh lemon juice

1/2 tsp.

Worcestershire sauce

1/8 c.

freshly ground black pepper

1/8 c.

dry English mustard

SALAD

1 ch.

finely chopped iceberg lettuce

1 ch.

finely chopped chicory leaves

1 ch.

finely chopped watercress, plus more for garnish

poached turkey breast, finely chopped

medium ripe tomatoes, peeled, seeded and finely chopped

avocado, peeled, seeded and finely chopped

crumbled blue cheese

bacon slices, cooked and crumbled

hard-boiled eggs, peeled and finely chopped

  1. Start dressing: Whisk together water, red wine vinegar, lemon juice, Worcestershire sauce, salt, garlic, sugar, pepper and dry mustard in a small bowl until blended.
  2. Add oils: Whisk constantly, add vegetable oil and olive oil in a slow, steady stream until dressing is emulsified.
  3. Refrigerate: Keep covered and refrigerated until ready to serve. Whisk dressing to combine just before serving.
  4. Mix the lettuce: Combine the iceberg lettuce, chicory and watercress in a bowl.
  5. Assemble the salad: In straight, separate lines, arrange the turkey, tomatoes, avocado, blue cheese, bacon and eggs on top of the greens.
  6. Garnish: Sprinkle the chives diagonally over the salad.
  7. To serve: To serve, present the salad to the table, toss with the dressing and place on chilled plates with watercress sprigs for garnish.
